Self-inventory…

God has blessed me with some time alone. Thanks, God.

I’m more than half way through the current WIP, which means everything is easier from here. Really. I don’t know why. I only know there is something about being more than half way. The rest comes much more easily. Whew. About time. I’d planned on being done at the end of last month but found myself stuck. This WIP isn’t easy. Grace didn’t want to tell her story.

Being home alone, I’m taking the opportunity to try a new recipe, every day. Monday, I kept it simple: A Pumpkin Smoothie by Rhonda Plumhoff from her little cookbook Fall in Love with Pumpkin Again. I found it very refreshing. Tuesday, I tried Kathy Altman’s recipe for Pumpkin Coconut Muffins. Delicious. Wednesday, I’m trying another Rhonda Plumhoff recipe. This time it’s from her cookbook Literary Chocolate for Tall, Dark and Chocolate Truffles, created with cover model/businessman Jimmy Thomas in mind. Yes, this Jimmy Thomas:

Thursday, Friday, and Saturday, I haven’t decided yet. I have coconut milk and rice, but I need to see if the milk is still any good. I also have buttermilk I need to use. I haven’t made lavender pancakes and buttermilk syrup in a long time. I have more pumpkin, more chocolate, more caramels, more coconut. Have I mentioned I really enjoy baking/cooking? Yes, for me, it’s play. Believe it or not, I eat more healthfully when I’m having fun cooking.

    • I’m blaming it on summer. After all, I was trained from a very young age to take the summer off. 😉

  3. Mmmmm. I love all things pumpkin. Weirdly, chocolate I can take or leave.

    Baking is an art, for sure. I’m glad it brings you so much joy!

  4. Seeing your items, simple rice pudding sounds so good. Then again, I’m the person who is in the mood to make gingerbread cookies this weekend.

    • Good to see you, stinky. 🙂 Gingerbread cookies sound really yummy. I will not add one more thing to my list, as tempting as it is. LOL!
